If you are using or making a homemade cold smoker, be sure that the actual smoking chamber is in a separate unit from the chamber where the smoke is being made. With a simple length of wide tubing, you can direct the smoke to the smoking chamber without transferring a lot of the heat at all.
What is smoking with some wood? Well, if you’ve barbecued using wood before, you will know which kinds of wood are safe. As a rule of thumb, try to avoid woods with a lot of resin, like pine. Always choose hard woods or woods from fruit trees. Apple, cherry, hickory, and even oak wood are all recommended for smoking. The Importance Of Brining Your Food
Cold smoking doesn’t really cook the food at all so you can expect bacteria and germs to grow on the food. This is actually very dangerous for your health. That’s why, it’s highly recommended that you brine your food before going through the cold smoking process. Brining will make your food salty and thus making it hard for microbes to live and spoil it. There are many good brining recipe available that you can use so make sure to soak your meat in it for a while before using your home or electric smoker.
How Long Will It Take?
Cold smoking can take quite a while and you might have to add chips to your smoking box to ensure that your food is always getting a constant flow of smoke. A thermometer can be quite helpful because you can easily check and maintain the temperature in the cold smoking chamber.
Food can be kept in the smoking box for up to several days using cold smoking so it’s very important that you make sure that your setup is always secure and safe. That last thing you want is to endanger yourself with fires. Think about the joy of smoking any food you want such as your own homemade bacon.
